Sipcam Oxon S.p.A – Design and microbial production of natural metabolites for agro-industrial applications; Postdoctoral Research Fellow founded by Sipcam Oxon S.p.A

Simone Salza, PhD, is a visiting researcher specialized in applied solid-state fermentation and fungal biotechnology for food, bio-technology and industrial applications. He obtained his PhD in Solid State Fermentation and Fungi Biodiversity (2025) from the University of Barcelona in collaboration with Liquats S.A., focusing on the development of alternative protein ingredients for innovative food technologies.
Currently, Simone is a PostDoctoral Researcher at the University of Milano-Bicocca, working with Sipcam Oxon S.p.A. on the microbial production of natural metabolites for sustainable agro-chemical applications.
His research experience is strongly international and interdisciplinary, including academic periods at the Indonesia Institute of Life Sciences (i3L), where he also supervised bachelor’s and master’s students.
Driven by curiosity, adaptability, and a proactive mindset, Simone combines academic research with industrial collaboration and scientific communication, building a solid and resourceful profile oriented toward future industrial and research challenges.
