Susanna Perotti earned a Bachelor’s degree in Food Science and Technology and a Master’s degree in Human Nutrition from the University of Milan. After completing her Master’s, she was awarded a fellowship for promising young researchers at the same University, focusing on the study of food and gut bacteria and their relationship with human health.
She is currently in her second year of a Ph.D. program at the University of Milano-Bicocca, where her research focuses on microorganisms associated with kombucha and the valorization of SCOBY. She is also involved in studying the biodegradation of biobased plastic polymers in aquatic ecosystems.
She presented her work at three international conferences (MicrobiotaMI, Symposium on Lactic Acid Bacteria – 14th International and 2nd Fermented Foods Forum). Additionally, she mentored a master’s student and worked as a laboratory tutor for the General Microbiology course in the bachelor’s program in “Viticulture and Enology” at the University of Milan.
